Here is a recipe for a basic lentil soup that I make all the time. Really easy and really yummy.
2 cups lentils
2 quarts chicken broth
2 carrots, sliced
2 tsp salt (add more if needed)
2 tsp thyme
2 tsp black pepper
Cook onion first, and then add everything else.
*Notes: Sometimes I just use water instead of chicken broth (or a combination). And sometimes I use split peas instead of lentils.
