Cherry, Goat Cheese and Arugula Pizza

Here is the recipe:

Pizza dough

2 cups cherries, pitted and halved

4 oz goat cheese, crumbled

2 cups arugula

1 cup balsamic vinegar

2 T honey

Add the balsamic vinegar, honey, and a pinch of salt to a small saucepan. Bring the mixture to a boil then reduce the heat to medium low and simmer for 6-8 minutes and is thick and syrupy.

Bake crust for 10 minutes at 400 degrees. Scatter the goat cheese and cherries over the top of the pizza. Bake for 5 more minutes. Remove from oven and top with arugula, and drizzle with balsamic syrup.

Corn Blueberry Pizza

Here is the recipe:

Pizza dough

3 cups frozen corn

1 avocado

4 T olive oil

Juice of 2 limes

2 tsps honey

1 tsp chili powder

1 tsp paprika

2 T chives, chopped

1/2 cup coconut flakes

2 cups fresh basil, chopped

1 cup fresh blueberries

4 oz feta, crumbled

In a large bowl, mix corn, 3 T olive oil, half the lime juice, honey, chili powder, paprika, and chives.

In a food processor, puree avocado, 1 T olive oil, half the lime juice, and a pinch of salt. Add 2 T of the puree to the corn mixture.

Spread remaining avocado puree over pizza dough. Top with corn mixture, blueberries, feta cheese, and coconut flakes.

Bake at 400 degrees for 13 minutes.
