Steam a head of cauliflower. take the stem out, and mush it up really good. Add shredded cheese, mush around even more. Add cayenne pepper to taste. Pack it into a casserole dish, put more cheese on top.
It is super yummy! Goes well as a side dish with pretty much anything. It's a hit every time I make it.
1 tablespoon of gluten free flour (what we use, but you can use regular flour) 8 large eggs 1/4 cup water
Coconut oil in pan at medium heat Mix batter with whisk until light and fluffy pour a little bit of batter in pan and shake pan around to evenly distributed wait till you can peal the edge up and flip with your own hand (I flip with own hand, husband likes to not "burn" his hands so he uses a spatula) Once out of the pan you can put some nutella, or jam, or butter or whatever you want in the middle and roll it up for a high protein breakfast, lunch, dinner, snack whatev :-)

OK, my all time favorite comfort food is called fake baked ziti. It's what I make people who've just had a baby, because there is no resisting baked cheese AND it's super easy to make two. Cook one lb ziti noodles Dump in one jar of sauce cook up one lb sausage or spicy meat of some kind. I've also been known to use a soy kielbasa from Whole Foods. Mix it into the noodles. Put it all into a 9x13 and cover the top with a jar of alfredo. Top with 3 cups shredded cheese and bake at 375 for 15 minutes then broil until the cheese is bubbly and starting to brown. Only make this on days you know you won't eat anything else, because it is DEADLY. Did I mention easy? Kinda like me. All I need is some bloggy love. :)

mush the cauliflower up, not the stem that you removed...I re-read it and it sounded like i only made it with the stem. :)
Oh and then bake it in the oven for 5 minutes to melt the cheese. Sorry for all the posts!

Veggie Pizza has become a weekly now that I am no dairy and little meat with Seven nursing. SO
Veggie Pizza
Bob's redmill pizza dough recipe (only I use Kamut)
Pesto and white beans blended to a hummus spread onto the cooked dough which is now crust
Top that with sauted onions, garlic, mushrooms, bell pepper
top that with tomoatoes and basil
Throw in the oven for an even heat and chow!
I use whatevers in the fridge often. Last night I did kidney beans, banana peppers and onions topped it with black bean and corn salsa....YUM
