Mashed Potato Pizza

Good, although nothing too unique or special.

Here is the recipe:

Pizza dough (use whatever recipe you want, this is what we use)
4 large potatoes
2 cloves garlic
1/4 cup butter
1/2 cup milk
8 oz bacon, crumbled
8 oz shredded cheese
1 lb Brussels sprouts, thinly sliced

Boil potatoes until soft. Use mixture to mash with garlic, butter and milk. Cook and crumble bacon.





Spread mashed potatoes evenly over dough. Top with Brussels sprouts, bacon and cheese.

Bake at 400 for 15 minutes.

Pizza Bianca with Arugula, Bacon and Mushrooms

A good, solid pizza that everyone enjoyed, but nothing really unique about it.

Here is the recipe:

Pizza dough (use whatever recipe you want, this is what we use)
8 oz bacon
1 onion, thinly sliced
1 package (8 oz) whole button mushrooms, quartered
2 cups ricotta cheese
2 cups loosely packed baby arugula
2 cups shredded cheese

Cook and crumble bacon. Cook mushrooms and onion for 10 minutes. Sprinkle with 1/4 tsp salt and 1/8 tsp pepper.

Spread ricotta evenly over dough. Arrange onion mixture and arugula evenly over ricotta. Sprinkle with bacon and shredded cheese. Bake at 400 for 15 minutes.

Cantaloupe and Sweet Ricotta Pizza with Pine Nuts

Everyone in the family enjoyed it!

Here is the recipe:

Pizza dough (use whatever recipe you want, this is what we use)
2 cups ricotta cheese
1/4 cup honey
2 cups diced cantaloupe pieces
1/4 cup pine nuts
1/2 cup fresh basil

Mix the ricotta cheese and honey and then spread onto the pizza dough. Top with cantaloupe, pine nuts and basil. Bake at 425 for 15 minutes.

Fig and Arugula Pizza

Good. Differing opinions from the crew.

Here is the recipe:

Pizza dough (use whatever recipe you want, this is what we use)
6 fresh figs cut into 1/4″ slices
1 cup balsamic vinegar
1 cup gorgonzola cheese (crumbled)
2 cups ricotta cheese
2 tablespoons olive oil
1 lemon zested then juiced
1 teaspoon sugar
1 red onion, sliced
3 cups arugula

In a medium skillet over low heat melt 1 T butter then add the onions and cook until onions are caramelized, stirring occasionally. This could take 15-20 minutes.

In a medium saucepan simmer the balsamic vinegar until it reduces by about half then add the sugar and figs. Stir and set aside.

Combine the ricotta, lemon zest and one tablespoon olive oil together in a small bowl and set aside.

To assemble: Spread the ricotta mixture on the crust, add the drained figs, caramelized onions, and gorgonzola cheese.

Bake at 400 for 15 minutes.

Toss the arugula with the other tablespoon olive oil, lemon juice and salt and pepper to taste.

Let pizza cool slightly, top with arugula mixture and serve.
