Here is the recipe:
Pizza dough (use whatever recipe you want, this is what we use)
1 lb Brussels sprouts, thinly sliced
2 cups white cheddar
1/2 cup grated Parmesan
1/2 cup roasted pistachios, chopped
1 onion, sliced
3 garlic cloves, chopped
Heat 2 T butter in skillet. Add sliced onions. Cook for 10 minutes. Turn heat down low and continue to cook, stirring often, until the onions become golden, about 20-25 more minutes.
Meanwhile, heat 1 T butter in another skillet. Add Brussels sprouts and garlic. Cook for 6-8 minutes.
Brush dough with olive oil. Top with a sprinkling of the cheddar cheese. Add on the caramelized onions, then the Brussels sprouts. Top with remaining cheddar and Parmesan. Top with pistachios.
Bake at 425 for 12 minutes.
