16 oz turkey bacon, chopped
1 onion, chopped
2 leeks, chopped
1 package mushrooms, halved
1 red bell pepper, diced
1 cup shredded chicken (or you can use a chicken breast)
1/2 cup white wine
1 (14 oz) can coconut milk
- Fry bacon. Set aside.
- Cook the onion and leeks in the pan and cook for 3 minutes or until the onion starts to turn translucent.
- Add chicken, mushrooms, cooked bacon and red bell pepper. Cook for another 5 minutes.
- Add white wine and cook until wine is reduced by 3/4.
- Season with salt and pepper.
