Pizza dough (use whatever recipe you want, this is what we use)
2 chicken breasts, shredded
1/2 red onion, diced
1/2 red pepper, diced
1/2 green pepper, diced
1 jalapeno, diced
2 garlic cloves, minced
1 tsp cumin
1 tsp paprika
1 tsp chili powder
14 oz enchilada sauce
8 oz cheese, shredded
Saute onions, garlic and peppers in a skillet. Toss in shredded chicken and spices. Cook for 5 minutes more. Spread a layer of enchilada sauce over the pizza dough. Cover in a small sprinkle of cheese, then top with the chicken and pepper mixture. Add remaining cheese and drizzle remaining enchilada sauce.
Bake at 400 degrees
for 13 minutes.
I didn't do this, but could also top with lettuce, tomatoes and sour cream after cooked.
