Here is the recipe:
Pizza dough
4 T butter
3 garlic cloves, chopped
1/2 cup panko breadcrumbs
1/2 cup sweetened flaked coconut
2 eggs
12 oz small shrimp, peeled and deveined
1 cup coconut oil
2 cups mozzarella, shredded
1 jalapeno, diced
1-1/2 cups diced pineapple
1/2 red onion, thinly sliced
2 T chopped scallions
Spread dough on cookie sheet. In a small saucepan, melt butter over medium heat with garlic. Brush melted garlic butter on dough and bake for 5 minutes. Set aside.
In a shallow dish, stir to combine panko, shredded coconut. 1/2 tsp salt and 1/8 tsp pepper. Place eggs in a separate dish and beat with a whisk. Coat shrimp in egg then coat in panko and coconut. Place on a plate.
Heat coconut oil in a medium skillet over medium heat. Cook shrimp until lightly golden, about 2-3 minutes on each side.
Top crust with half of the cheese, jalapeno, pineapple, red onion, and coconut shrimp. Sprinkle remaining cheese and bake at 400 for 11 minutes. Top with scallions.
