Here is the recipe:
Pizza dough
1/4 French baguette, torn into pieces
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp pepper
1/2 lb ground chicken
1/4 cup diced onion
3 cloves garlic, minced
1/4 cup red wine
4 tomatoes, diced
1 T basil
1/4 cup Parmesan cheese, grated
2 cups mozzarella cheese
Preheat oven to 400 degress. Put bread pieces in the bowl of a food processor with 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp pepper. Pulse until you have crumbs.
Toast the crumbs in a skillet over medium heat with 1 T butter until nicely browned. Remove from skillet and set aside.
In same skillet, cook ground beef. Add onion, garlic, 1 tsp Italian seasoning, 1 tsp salt, and 1/2 tsp pepper. Remove from skillet and set aside.
To make the sauce, deglaze the skillet with 1/4 cup red wine. Add 1 T diced onion and 2 cloves garlic, chopped. Cook for 30 seconds and add the diced tomoatoes, 1 T basil, 1 tsp salt, and 1/2 tsp pepper. Cook for 7 minutes. Pour sauce into blender and blend on low until the tomatoes are pulverized into a thick sauce.
Pour sauce over pizza dough. Top with 1/4 cup Parmesan cheese, cooked chicken, mozzarella, and breadcrumbs.
Cook at 400 degrees for 13 minutes.
