Zucchini, Ricotta, and Pine Nut Pizza

Here is the recipe:

Pizza Dough

1 medium zucchini, sliced

1 cup ricotta cheese

4 T pesto

1 lemon, zest and juice

1/2 cup shredded Parmesan cheese

2 T pine nutes

Grill zucchini. 

In bowl, whisk together ricotta, pesto, lemon zest and juice, salt and pepper.

Spread ricotta mixture on top of dough. Top with grilled zucchini, Parmesan cheese, and pine nuts.

Bake at 425 degrees for 13 minutes.
