Romesco Pizza with Spiced Chickpeas and Lemony Arugula
Here is the recipe:
Pizza dough (use whatever recipe you want, this is what we use)
Romesco Sauce:
1 red bell pepper, roasted
2 garlic cloves, chopped
1 tsp apple cider vinegar
3 T olive oil
Salt
Pinch of cayenne
Sauteed Spiced Chickpeas:
1 can chickpeas, drained
1/4 tsp cumin
1/2 tsp paprika
1/4 tsp salt
2 T butter, for cooking
3 cups baby arugula
1/2 red onion, thinly sliced
8 oz feta cheese
Juice from 1 lemon
2 tsp olive oil
Roast the red pepper over a gas flame set to medium-low, about 15 minutes. Once cool, peel skins and remove seeds. Blend with other sauce ingredients to make the romesco sauce.
Heat the 2 T butter in skillet. Add chickpeas and spices. Cook for 4-5 minutes.
Top dough with romesco sauce, onions, feta cheese, and chickpeas.
Bake at 425 degrees for 13 minutes.
While pizza is baking, toss the arugula with olive oil, lemon juice, salt, and pepper. When pizza is done baking, top with arugula.
