This is from a recipe that my mom used to make (except she made it with pork chops), and it was my FAVORITE recipe growing up. I absolutely loved it, and still do! I used to make it in an electric frying pan, but I don't really like using electric frying pans anymore because of leaching of the materials they're made out of, so I do it like this:
1 lb ground beef (or ground turkey, whatever)
1 onion, diced
64 oz tomato juice
4 cups rice
1 tsp pepper
1 tsp salt
In a big pot, boil rice, tomato juice, salt and pepper. Cover and simmer for however long the rice takes to cook (my brown rice takes around 40 minutes). Meanwhile, brown the ground beef and onion in a skillet. Add to the rice about 10 minutes before the rice is done cooking.
This makes A LOT, but my family still manages to eat it all in one sitting. Hurray for us!
