Onion Feta Spinach Pizza

Here is the recipe:

Pizza Dough

5 oz baby spinach

4 oz mushrooms, sliced

1 red onion, thinly sliced

1/2 tsp sugar

1 T balsamic vinegar

2 T butter

2 T flour

1 T garlic, minced

1 cup warm milk

3 T Parmesan cheese

2 cups mozzarella cheese

1 pkg feta cheese

Saute spinach until wilted. Transfer to strainer and press out excess liquid.

Saute mushrooms for 3-4 minutes. Remove

Cook onions for 10 minutes. Add sugar. Cook another 10 minutes. Add balsamic vinegar. Set aside.

In small saucepan, melt butter and add flour and garlic and cook for 1-2 minutes. Add warm milk. Add Parmesan. Salt and pepper to taste.

To pizza dough with white sauce. Sprinkle on 1-1/2 cups mozzarella cheese, followed by mushrooms, spinach, and caramelized onions, remaining mozzarella and feta cheese.

Bake at 425 degrees for 13 minutes.
